Flavorful Korean BBQ Meatballs Recipe with Savory Sauce

  • 1 lb ground beef (80/20 blend for juicier meatballs)
  • 1/2 cup breadcrumbs (panko works best for light texture)
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1/4 cup green onions, finely chopped
  • Salt and pepper to taste
  • 1/3 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon gochujang
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, soy sauce, sesame oil, sugar, green onions, salt, and pepper. Mix gently until evenly combined.
  3. Scoop about 1 tablespoon of the mixture and shape it into a ball. Place each meatball on the prepared baking sheet.
  4. Bake the meatballs for 18-20 minutes, or until browned and cooked through.
  5. In a small saucepan over medium heat, combine soy sauce, honey, rice vinegar, gochujang, garlic, and sesame oil. Simmer for 3-5 minutes, stirring occasionally, until slightly thickened.
  6. Transfer the cooked meatballs to a large bowl and pour the sauce over them. Toss gently until coated.
  7. Sprinkle sesame seeds and additional chopped green onions on top. Serve immediately with rice or noodles.

Notes

Don’t overmix the meatball mixture to keep them tender. Adjust the sauce seasoning to taste, and simmer the sauce for a glossy finish.
