  • 2 1/4 teaspoons (7g) active dry yeast
  • 1 teaspoon (4g) sugar
  • 1 teaspoon (5g) salt
  • 1/2 cup (120ml) warm water
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (10g) minced garlic
  • 1 teaspoon (3g) mixed herbs (parsley, thyme, oregano)
  • 1 cup (100g) shredded mozzarella cheese
  • 2 tablespoons (10g) grated Parmesan cheese

Instructions

  1. In a large mixing bowl, combine active dry yeast, sugar, and warm water. Let it sit for 5-10 minutes until frothy.
  2. Add all-purpose flour and salt to the yeast mixture. Gradually add warm water and olive oil. Mix until a shaggy dough forms.
  3. Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Sprinkle more flour if needed.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 45 minutes or until doubled in size.
  5. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. Punch down the risen dough and roll it out into a rectangle about 1/2 inch thick.
  7. Spread olive oil evenly over the dough. Sprinkle minced garlic, mixed herbs, and shredded mozzarella cheese on top.
  8. Roll the dough tightly into a log and pinch the seams to seal. Place it on the prepared baking sheet seam-side down.
  9. Brush the top with olive oil and sprinkle grated Parmesan cheese.
  10. Bake for 25-30 minutes or until golden brown. Let cool for 10 minutes before slicing.
