Flavorful Farfalle Pasta Recipe with Spinach & Mushrooms

A comforting and versatile pasta dish featuring earthy mushrooms, fresh spinach, and a creamy sauce that clings to perfectly cooked farfalle pasta.

  • 12 ounces farfalle pasta, cooked al dente
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 ounces mushrooms, sliced (baby bella or cremini)
  • 4 cups fresh spinach, washed and stems removed
  • 1 cup heavy cream
  • Β½ cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Β½ teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to boil and cook the farfalle pasta according to package instructions until al dente. Reserve Β½ cup of pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sautΓ© for 1-2 minutes until fragrant.
  3. Add the sliced mushrooms to the skillet and cook, stirring occasionally, for about 5-7 minutes, until they are golden and tender.
  4. Stir in the fresh spinach and cook for 2-3 minutes, just until wilted.
  5. Reduce heat to low and pour in the heavy cream. Stir well to combine, then let it simmer for 3-4 minutes until slightly thickened.
  6. Add the Parmesan cheese, salt, pepper, and red pepper flakes (if using). Continue stirring until the cheese melts and the sauce is smooth.
  7. Transfer the cooked pasta to the skillet and toss to coat evenly with the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
  8. Serve immediately, garnished with extra Parmesan and a sprinkle of red pepper flakes for added flavor.

Notes

Reserve pasta water to adjust sauce consistency. Avoid overcooking spinach to maintain its vibrant color and texture.
