  • 3 to 4 pounds pork shoulder (Boston Butt), with some marbling
  • 1 ½ cups BBQ sauce (smoky, slightly tangy, e.g., Sweet Baby Ray’s or Stubb’s)
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons apple cider vinegar
  • 12 small slider buns (soft and slightly sweet)
  • Optional toppings: pickles, coleslaw, crispy fried onions, cheddar cheese slices

Instructions

  1. Pat the pork shoulder dry with paper towels.
  2. Mix brown sugar, smoked paprika, onion powder, garlic powder, salt, and black pepper in a small bowl.
  3. Rub the spice blend all over the pork, pressing it in to stick well.
  4. Place sliced onion at the bottom of the crockpot.
  5. Put the seasoned pork shoulder on top of the onions.
  6. Sprinkle minced garlic over the pork.
  7. Pour apple cider vinegar evenly around the edges of the crockpot, not directly on the meat.
  8. Cover and cook on low for 8 hours or on high for 4 to 5 hours until pork is tender and shreds easily.
  9. Carefully transfer pork to a large bowl, leaving onions and juices in the crockpot.
  10. Shred pork into bite-sized pieces using two forks or tongs, discarding large fat chunks but keeping some for moisture.
  11. Pour BBQ sauce over shredded pork and stir until well coated. Add reserved cooking liquid if mixture is dry.
  12. Slice slider buns in half and toast lightly if desired.
  13. Pile BBQ pulled pork on bottom half of buns, add optional toppings, then cover with bun tops.
  14. Arrange sliders on a platter and serve warm or at room temperature.

Notes

For gluten-free, swap slider buns with gluten-free rolls or lettuce wraps. Add cayenne pepper or hot sauce for a spicy kick. Shred pork while warm for easier shredding. Keep some cooking juices to moisten pork if dry. Prep spice rub and onions the night before to save time.
