Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the ingredients: peel and devein the shrimp if needed; slice the sausage into ½-inch rounds; slice the bell peppers and onion into similar-sized pieces for even cooking.
  3. In a large bowl, combine shrimp, sausage, bell peppers, and onion.
  4. Add the seasoning: sprinkle 2 tablespoons Cajun seasoning, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon cayenne pepper, salt, and pepper over the mix.
  5. Drizzle 2 tablespoons olive oil over everything. Toss well with your hands or tongs until all pieces are evenly coated with seasoning and oil.
  6. Spread the mixture in a single layer on the sheet pan. Avoid overcrowding.
  7. Place the sheet pan in the oven. Roast for 10 minutes, then remove and use tongs to flip the shrimp, sausage, and veggies for even cooking.
  8. Return to the oven and roast for an additional 5-7 minutes until shrimp are opaque and slightly curled, sausage is browned, and veggies are tender with caramelized edges.
  9. Remove from oven and squeeze fresh lemon juice over the top if desired. Toss gently and serve immediately.
