Ingredients

Scale
  • 3 cups shredded rotisserie chicken
  • 8 medium-sized flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded Mexican blend cheese
  • 1 small can green chilies, drained
  • 1 small onion, finely diced
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro, sliced jalapeños, diced avocado, lime

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your baking dish with cooking spray or oil.
  2. In a mixing bowl, combine shredded rotisserie chicken, 1 cup of enchilada sauce, diced onion, green chilies, garlic powder, and a pinch of salt and pepper. Mix until well combined.
  3. Lay out a tortilla on a flat surface. Spoon about ¼ cup of the chicken mixture onto one side of the tortilla. Sprinkle a little cheese over the filling, then roll tightly.
  4. Place the rolled tortilla seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
  5. Pour the remaining enchilada sauce evenly over the rolled tortillas, making sure they’re completely covered. Sprinkle the remaining cheese generously on top.
  6. Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool slightly before serving. Add your favorite toppings and enjoy!

Notes

Warm tortillas before rolling to prevent cracking. Use freshly shredded cheese for better melting. Customize spice level with mild or spicy enchilada sauce and toppings.
