  • 1 package (10 count) refrigerated cinnamon rolls with icing
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Icing from cinnamon rolls (reserved for drizzling)

Instructions

  1. Remove the cinnamon rolls from the package and cut each into quarters.
  2. In a medium bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until fully combined and slightly frothy.
  3. Arrange the cinnamon roll pieces evenly in a 9×13-inch baking dish.
  4. Pour the custard mixture slowly over the rolls, pressing them gently so they soak up the liquid. Cover the dish tightly with plastic wrap or foil.
  5. Refrigerate the casserole for at least 8 hours or up to 24 hours to allow the cinnamon rolls to soak fully.
  6. Preheat oven to 350°F (175°C). Remove the cover and bake the casserole for 40-45 minutes or until the top is puffed and golden brown and a knife inserted in the center comes out clean.
  7. Remove from oven and let cool for 10 minutes before drizzling the reserved cinnamon roll icing over the top.
  8. Serve warm with fresh fruit, syrup, or a dusting of powdered sugar if desired.

Notes

Use room temperature eggs and milk for a smooth custard. Do not skip the overnight soak for best texture. If the top browns too quickly, tent with foil halfway through baking. For a crispier top, sprinkle brown sugar or cinnamon sugar before baking. Frozen cinnamon rolls can be used if thawed first. Dairy-free and vegan substitutions are possible using plant-based milk and flax eggs.
