  • 3 tablespoons (45g) unsalted butter, softened
  • 10 ounces (280g) green-tinted mini marshmallows (or regular mini marshmallows with green food coloring)
  • 6 cups (about 150g) Lucky Charms cereal
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter or non-stick spray, for greasing the pan

Instructions

  1. Lightly grease a 9×13-inch baking pan with butter or non-stick spray. Optionally, line with parchment paper with an overhang for easy removal.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter, about 2-3 minutes. Keep heat low to avoid browning.
  3. Stir in 10 ounces of green mini marshmallows continuously until fully melted and smooth, about 4-5 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt.
  5. Pour 6 cups of Lucky Charms cereal into a large mixing bowl. Pour the marshmallow mixture over the cereal.
  6. Gently fold the marshmallow mixture into the cereal using a rubber spatula or wooden spoon, being careful not to crush the cereal pieces.
  7. Transfer the mixture into the prepared pan. Using a buttered spatula or wax paper, press the mixture down evenly and firmly without pressing too hard.
  8. Let the treats cool at room temperature for at least 1 hour or until firm. Alternatively, chill in the fridge for about 30 minutes to speed up setting.
  9. Once set, lift the treats out using the parchment overhang if used, and cut into squares or fun shapes. Serve fresh or store as desired.

Notes

Use low heat to melt marshmallows to avoid scorching. Grease spatula or hands before pressing mixture to prevent sticking. Work quickly once marshmallow mixture is melted. Cooling completely before cutting prevents crumbly bars. For gluten-free, use gluten-free cereal. For dairy-free, substitute butter with coconut oil and use dairy-free marshmallows.
