  • 1 cup (150g) fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.
  3. Add the egg, milk, melted butter, vanilla extract, and lemon zest (if using). Stir gently with a whisk or fork until just combined; the batter should be a bit lumpy.
  4. Carefully fold in the blueberries using a spatula or large spoon to keep them intact.
  5. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Optionally, sprinkle a pinch of sugar on top.
  6. Bake for 18-22 minutes, checking doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
