  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 cup diced bell peppers (red or yellow)
  • 1 medium zucchini, sliced into half-moons
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 4 cups vegetable broth
  • 4 ounces cream cheese, softened
  • 1 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: mince garlic, chop onion, dice bell peppers, slice zucchini and asparagus, halve cherry tomatoes (about 10 minutes).
  2. Heat olive oil over medium heat in a large deep skillet or wide sautΓ© pan. Add garlic and onion; cook 2-3 minutes until fragrant and translucent without browning.
  3. Add bell peppers, zucchini, and asparagus; sautΓ© 4-5 minutes until vegetables start to soften but remain slightly crisp.
  4. Add uncooked pasta and vegetable broth to the pan; stir to combine. Bring to a gentle boil, then reduce heat to medium-low.
  5. Cover with lid and simmer, stirring occasionally, until pasta is al dente and most liquid is absorbed (about 10-12 minutes).
  6. Remove lid; add softened cream cheese and grated Parmesan. Stir vigorously until cheese melts and sauce is creamy. Add broth or water if sauce is too thick.
  7. Fold in cherry tomatoes, lemon zest, and chopped basil. Season with salt and pepper to taste. Cook 2-3 minutes to warm tomatoes and blend flavors.
  8. Serve hot, garnished with extra basil or Parmesan if desired.

Notes

Use gluten-free pasta for gluten sensitivities. For a vegan version, substitute cream cheese and Parmesan with dairy-free alternatives and use nutritional yeast.
