A quick and easy cinnamon roll mug cake made with pantry staples, ready in under 5 minutes. This warm, gooey treat mimics the classic cinnamon roll flavor with a cream cheese glaze, perfect for satisfying sweet cravings fast.

  • 1 tablespoon unsalted butter, melted
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons powdered sugar
  • Optional: pinch of salt

Instructions

  1. In a microwave-safe mug, combine 4 tablespoons all-purpose flour, 1/4 teaspoon baking powder, 2 tablespoons granulated sugar, and 1 teaspoon ground cinnamon. Stir well to evenly distribute the cinnamon and baking powder.
  2. Add 3 tablespoons milk, 1 tablespoon melted unsalted butter, and 1/4 teaspoon vanilla extract. Stir gently until a smooth batter forms with no lumps. If too dry, add a tiny splash of milk.
  3. In a small bowl, mix 1 tablespoon brown sugar with 1/2 teaspoon ground cinnamon to create the cinnamon swirl.
  4. Spoon half of the batter into the mug. Sprinkle half of the cinnamon sugar mixture over the batter. Add the remaining batter on top, then sprinkle the rest of the cinnamon sugar on top. Gently swirl the cinnamon sugar through the batter using a toothpick or knife.
  5. Microwave on high for 90 seconds. Check doneness by inserting a toothpick in the center; it should come out mostly clean with a few moist crumbs. If needed, microwave in additional 10-second bursts to avoid overcooking.
  6. While the cake cooks, whisk together 2 tablespoons powdered sugar and 2 tablespoons softened cream cheese until smooth and creamy. Add a few drops of milk if too thick.
  7. Once the mug cake is done, spoon the cream cheese glaze over the warm cake. Serve immediately with a spoon.

Notes
