A quick and healthy baked salmon recipe featuring a tangy-sweet honey Dijon glaze and roasted broccoli, perfect for busy weeknight dinners.

Ingredients

Scale
  • 4 salmon fillets (about 6 oz / 170 g each), skin-on or skinless
  • 4 cups broccoli florets (about 300 g), fresh and trimmed
  • 3 tablespoons honey (mild clover or wildflower honey recommended)
  • 2 tablespoons Dijon mustard (Grey Poupon recommended)
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse and dry broccoli florets. Spread evenly on a parchment-lined baking sheet. Drizzle with 1 tablespoon olive oil, sprinkle with salt and pepper, and toss gently to coat. Spread in a single layer.
  3. In a medium bowl, whisk together honey, Dijon mustard, minced garlic, lemon juice, and remaining 1 tablespoon olive oil until smooth. Add red pepper flakes if using.
  4. Pat salmon fillets dry with paper towels. Season lightly with salt and pepper on both sides. Place salmon skin-side down on the baking sheet next to the broccoli, leaving space between pieces.
  5. Brush the tops of the salmon fillets generously with the honey Dijon glaze.
  6. Roast in the oven for 12-15 minutes, or until salmon flakes easily with a fork and broccoli edges are crisp and golden.
  7. At about 8 minutes, gently toss the broccoli florets with tongs for even roasting, being careful not to disturb the salmon.
  8. Optional: Broil for 1-2 minutes at the end for extra caramelization, watching closely to prevent burning.
  9. Remove from oven and let salmon rest for a couple of minutes before serving warm with roasted broccoli.

Notes

Pat salmon dry before glazing to help the glaze stick. Avoid overcrowding broccoli to ensure it roasts instead of steams. Whisk glaze thoroughly to combine honey and mustard evenly. Watch broiling closely to prevent burning the honey glaze. If broccoli cooks faster, remove early and keep warm covered with foil.
