  • All-purpose flour (for dusting)
  • 1 ½ cups fresh raspberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, softened
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ teaspoon ground cinnamon (optional)
  • Powdered sugar, for dusting (optional)
  • Drizzle of melted white chocolate or cream cheese glaze (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment paper.
  2. Lightly dust your work surface with flour, then roll out the pizza dough into a 12-inch circle or rectangle. Transfer it to the prepared baking sheet.
  3. In a bowl, combine the raspberries, sugar, cornstarch, and vanilla extract. Stir gently until the raspberries are evenly coated.
  4. In another bowl, mix the softened butter, flour, brown sugar, and cinnamon. Use a fork or pastry cutter to blend the ingredients until the mixture resembles coarse crumbs.
  5. Spread the raspberry topping evenly over the pizza dough, leaving a small border around the edges. Sprinkle the crumble topping generously over the raspberries.
  6. Place the pizza in the oven and bake for 12-15 minutes, or until the crust is golden and the crumble is lightly browned.
  7. Remove from the oven and let the pizza cool for 5 minutes before slicing. Dust with powdered sugar or drizzle with white chocolate if desired.

Use fresh raspberries for better texture, chill the crumble mix if your kitchen is warm, and keep an eye on the oven to avoid over-browning.
