  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 slices of bacon, cooked and chopped
  • 1 cup shredded cheddar cheese
  • 8 small flour tortillas
  • 2 tablespoons butter, melted
  • Optional toppings: diced avocado, salsa or hot sauce, fresh cilantro, sour cream

Instructions

  1. Preheat the oven to 375Β°F (190Β°C) and line a baking sheet with parchment paper or aluminum foil.
  2. Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate and chop into bite-sized pieces.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until smooth.
  4. Wipe out the skillet, add a small knob of butter, and scramble the eggs over medium heat until just set. Remove from heat.
  5. Lay the tortillas flat on the baking sheet and brush each one with melted butter.
  6. Divide the scrambled eggs evenly among the tortillas, followed by the bacon and shredded cheese.
  7. Fold the tortillas gently in half and place them seam-side down on the baking sheet. Bake for 10-12 minutes, or until the tortillas are golden and crisp, and the cheese is melted.
  8. Carefully transfer the tacos to a serving platter. Add your favorite toppings like avocado, salsa, or fresh cilantro, and enjoy!
