  • Ingredients as called for on the cake mix box (usually eggs, oil, and water)
  • 2 cups whole milk (480 ml)
  • 1/2 cup granulated sugar (100 g)
  • 1/3 cup unsweetened cocoa powder (35 g)
  • 1/4 cup cornstarch (30 g)
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons unsalted butter (28 g), cut into pieces
  • 1 cup heavy cream (240 ml)
  • 8 oz bittersweet or semi-sweet chocolate, chopped (225 g)
  • 1 cup chocolate chips or chopped chocolate (170 g)
  • Whipped cream (optional, for topping)
  • Chocolate shavings or curls (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Prepare chocolate cake batter according to box or homemade recipe instructions. Pour into greased 9×13 inch pan and bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool completely (about 1 hour including cooling).
  2. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Slowly add milk while whisking to avoid lumps. Cook over medium heat, stirring constantly, until thickened and bubbling (7-10 minutes). Remove from heat and stir in butter and vanilla extract until smooth. Cover with plastic wrap on surface and chill at least 2 hours.
  3. Heat heavy cream in a small saucepan over medium heat until just simmering. Pour over chopped chocolate in a heatproof bowl. Let sit 2 minutes, then whisk until smooth and glossy. Let ganache cool and thicken at room temperature for 15-20 minutes.
  4. Cut cooled chocolate cake into 1-inch cubes. In trifle bowl, layer one-third of cake cubes evenly on bottom. Spoon half of chilled pudding over cake, spreading gently. Drizzle one-third of ganache over pudding. Sprinkle one-third of chocolate chips or chopped chocolate.
  5. Repeat layers: cake cubes, remaining pudding, ganache, and chocolate chips. Finish with final layer of cake cubes, remaining ganache, and chocolate chips. Optionally top with whipped cream and chocolate shavings.
  6. Cover and refrigerate assembled trifle for at least 2 hours before serving to allow flavors to meld and layers to set.

Notes

If ganache is too runny, chill briefly to thicken before layering. Chill pudding thoroughly to improve texture. Layer gently to prevent soggy cake. The trifle tastes better after resting overnight. For dairy-free, substitute coconut milk and dairy-free chocolate. For gluten-free, use gluten-free cake mix or brownies.
