  • 1 tablespoon heavy cream or full-fat coconut milk

Instructions

  1. Preheat your oven to 325°F (160°C). Line a 9×9-inch square baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Stir until mixture resembles wet sand. Press firmly into the bottom of the prepared pan.
  3. Bake the crust for about 10 minutes until set and lightly golden. Remove and cool slightly.
  4. In a large bowl, beat softened cream cheese with ½ cup sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  5. Gently fold in diced strawberries using a rubber spatula.
  6. Pour cheesecake filling over the baked crust and spread evenly. Bake at 325°F for 35-40 minutes until edges are set but center is slightly jiggly.
  7. Remove from oven and cool to room temperature, about 1 hour. Refrigerate for at least 3 hours or overnight to set.
  8. Melt chocolate chips with heavy cream in microwave-safe bowl in 20-second bursts, stirring until smooth.
  9. Drizzle melted chocolate over chilled cheesecake bars, creating swirls if desired.
  10. Use parchment overhang to lift bars from pan. Cut into 12 squares and serve immediately or keep refrigerated.
