A festive, crunchy, and sweet pink Chex mix coated in creamy white chocolate and strawberry powder, perfect for Valentine’s Day parties, gifting, or snacking. Quick to make, customizable, and always a crowd-pleaser.

  • 6 cups Rice Chex cereal
  • 2 cups Corn Chex cereal (optional)
  • 1 cup white chocolate chips
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons freeze-dried strawberry powder
  • 2 tablespoons pink sanding sugar (optional)
  • 1/2 cup mini marshmallows
  • 2 tablespoons Valentine’s sprinkles
  • 1/2 cup M&Ms Valentine Edition (optional)

Instructions

  1. Line a large baking sheet with parchment paper. Set out all ingredients and tools.
  2. In a large mixing bowl, combine Rice Chex and Corn Chex. Toss to mix.
  3. In a microwave-safe bowl, add white chocolate chips and coconut oil. Microwave in 30-second bursts, stirring after each, until smooth and glossy (about 1–2 minutes total). Stir in vanilla extract.
  4. Pour the melted chocolate mixture over the cereal. Use a rubber spatula to gently fold, coating all pieces evenly.
  5. In a zip-top gallon bag, combine powdered sugar and freeze-dried strawberry powder. Add pink sanding sugar if desired. Seal and shake to mix.
  6. Add the coated cereal to the sugar bag in batches. Seal and shake until every piece is dusted pink (about 10 seconds per batch). Repeat until all cereal is used.
  7. Spread the pink Chex mix onto the lined baking sheet. Let it cool for 10–15 minutes, until dry to the touch.
  8. Sprinkle in mini marshmallows, Valentine’s sprinkles, and M&Ms if using. Toss gently to combine.
  9. Transfer to serving bowls, mason jars for gifting, or airtight containers.

Notes

For gluten-free, use only Rice Chex and check toppings. For dairy-free, use allergy-friendly white chocolate chips. Melt chocolate slowly to avoid burning. Shake cereal in a zip-top bag for even coating. Let mix cool completely before adding candies. Store in airtight container for up to 5 days or freeze for up to 2 months. Customize mix-ins and colors for any occasion.
