  • 1 lb ground beef (80/20 preferred)
  • 8 oz cremini or button mushrooms, sliced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth (low-sodium preferred)
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • Salt and freshly ground black pepper, to taste
  • 1 tsp Worcestershire sauce (optional)
  • 1 (32 oz) bag frozen tater tots (thawed slightly)
  • ½ cup shredded mozzarella or Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat and add ground beef. Break apart and cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
  3. Add butter, chopped onions, and mushrooms to the skillet. Cook until onions are translucent and mushrooms release moisture, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Sprinkle flour over the beef and mushroom mixture, stirring constantly for 1-2 minutes to cook out raw flour taste.
  5. Slowly pour in beef broth while stirring to avoid lumps. Add cream, Worcestershire sauce, salt, and pepper. Simmer gently for 5-7 minutes until thickened, stirring occasionally.
  6. Remove from heat and stir in shredded cheddar and Parmesan cheeses until melted and smooth. Adjust seasoning if needed.
  7. Pour the beef and mushroom sauce into a prepared 8×8 inch baking dish and spread evenly.
  8. Arrange tater tots in a single layer on top of the sauce. Sprinkle mozzarella or Monterey Jack cheese over the tots.
  9. Bake for 30-35 minutes, or until tater tots are golden and crispy and sauce bubbles around edges.
  10. Let the casserole rest for about 5 minutes before serving.

Notes

If tater tots brown too quickly, tent foil over the top halfway through baking. If sauce is too thick before baking, stir in a splash more broth or cream. For gluten-free, use almond flour or gluten-free flour and gluten-free broth. For dairy-free, substitute cream and cheeses with plant-based alternatives. Broil last 2-3 minutes for extra crispiness but watch carefully to avoid burning.
