  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, salt, and baking soda until evenly combined.
  3. In a medium bowl, whisk buttermilk and egg until smooth. Stir in melted butter, then fold in chopped onion and diced jalapeño if using.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined. If batter is too thick, add a splash more buttermilk.
  5. Using a small ice cream scoop or two spoons, drop tablespoon-sized mounds of batter onto the prepared baking sheet, spacing about 1 inch apart.
  6. Bake for 15-20 minutes, turning the hush puppies halfway through baking until golden brown and firm.
  7. While baking, combine softened butter, honey, and a pinch of sea salt in a small bowl and stir until smooth.
