  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon garlic powder

  • 2 large eggs, beaten
  • ½ cup (60 grams) all-purpose flour
  • 3 tablespoons olive oil
  • 1 ½ cups (350 ml) marinara sauce
  • 1 ½ cups shredded mozzarella cheese (about 170 grams)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set a wire rack on top if available.
  2. Pound the chicken breasts to about ½ inch (1.3 cm) thickness using a meat mallet or rolling pin.
  3. Prepare dredging stations: place flour in the first shallow bowl, beaten eggs in the second, and combine panko, Parmesan, Italian seasoning, garlic powder, parsley, salt, and pepper in the third bowl.
  4. Lightly dust each chicken breast with flour, shaking off excess. Dip into beaten eggs, letting excess drip off.
  5. Press chicken into the panko mixture, ensuring a thick, even coating.
  6. Drizzle olive oil over the coated chicken or toss in a small bowl with olive oil to promote a golden crust.
  7. Arrange chicken on the wire rack over the baking sheet (or directly on parchment if no rack). Bake for 18-20 minutes until crust is crisp and internal temperature reaches 165°F (74°C), flipping halfway through.
  8. Remove from oven, spoon marinara sauce evenly over each piece, then sprinkle shredded mozzarella on top.
  9. Return to oven and bake for an additional 5-7 minutes until cheese is melted and bubbly.
