Instructions

  1. In a medium bowl, whisk together 1 cup all-purpose flour, 2 tablespoons sugar, and 1/4 teaspoon salt.
  2. In another bowl, beat 2 large eggs with 1 1/4 cups whole milk and 1 teaspoon vanilla extract until smooth.
  3. Gradually pour the wet ingredients into the dry mix, whisking constantly to avoid lumps. Stir in 2 tablespoons melted unsalted butter. The batter should be thin and pourable.
  4. Let the batter rest at room temperature for at least 15 minutes.
  5. Heat a non-stick skillet over medium heat and brush lightly with melted butter or oil.
  6. Pour about 1/4 cup batter into the center of the pan and quickly tilt and swirl to spread evenly into a thin circle. Cook for 1 to 2 minutes until edges are crisp and golden and the top is set but moist.
  7. Using a thin spatula, gently flip the crepe and cook the other side for 30 seconds to 1 minute until lightly golden. Remove to a plate.
  8. Repeat with remaining batter, brushing the pan with butter as needed.
  9. Spread about 1 tablespoon Nutella over each warm crepe. Fold into quarters or roll like a love letter. Optionally add fresh fruit slices.
  10. Serve warm with optional powdered sugar or honey drizzle.
