  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup grated Parmesan cheese (about 30g)
  • 1 tablespoon chopped fresh parsley (optional)
  • Pinch cayenne pepper (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Line a large rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Drain and rinse chickpeas. Spread on a clean kitchen towel or paper towels and pat dry thoroughly. Let air dry for 15 minutes if possible.
  3. Transfer dried chickpeas to a large mixing bowl. Add olive oil, garlic powder, onion powder (if using), salt, and black pepper. Toss until evenly coated.
  4. Spread chickpeas in a single layer on the prepared baking sheet. Remove any loose skins if desired.
  5. Bake for 35-40 minutes, stirring or shaking the pan every 10-12 minutes, until chickpeas are deep golden brown and crisp.
  6. Remove from oven, sprinkle with grated Parmesan cheese, toss gently, and return to oven for 5 more minutes until cheese is melted and slightly toasted.
  7. Let chickpeas cool on the baking sheet for 10-15 minutes to crisp up further. Sprinkle with chopped parsley or herbs if desired.
  8. Serve warm or at room temperature.

Notes

For extra crispiness, dry chickpeas thoroughly before roasting. Stir regularly during baking for even crunch. Parmesan should be added near the end to avoid burning. Air fryer adaptation: cook at 390Β°F for 15-20 minutes, shaking halfway. Store cooled chickpeas in an airtight container for up to 3 days; re-crisp in a hot oven before serving.
