  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon dried parsley

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Wash and scrub the Russet potatoes thoroughly. Pat them dry and slice them into wedges, aiming for about 8 wedges per potato.
  3. Place the potato wedges in a large mixing bowl. Add 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Toss until each wedge is fully coated.
  4. Arrange the wedges on the prepared baking sheet in a single layer with the cut side down. Make sure they aren’t overlapping, as this helps them crisp evenly.
  5. Bake for 25 minutes, then remove from the oven and use a spatula to flip each wedge. Sprinkle 1/2 cup of grated Parmesan cheese evenly over the wedges.
  6. Return the tray to the oven and bake for another 15-20 minutes, or until the wedges are golden brown and crispy.
  7. Remove from the oven and sprinkle with 1 tablespoon of dried parsley for a pop of flavor and color.
  8. Let the wedges cool for 5 minutes before serving. Serve with your favorite dipping sauce, such as ranch, garlic aioli, or ketchup.

Notes

Use Russet potatoes for the best texture. Don’t overcrowd the baking sheet to ensure crispiness. Flip the wedges halfway through baking for even browning. For extra crispiness, broil for the last 2-3 minutes.
