A quick and easy cheesy chicken casserole topped with crunchy Doritos for a comforting and crowd-pleasing meal.

  • 3 cups cooked chicken, shredded or chopped (rotisserie chicken works great)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream (Greek yogurt can substitute)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced green chilies
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 3 cups crushed Nacho Cheese Doritos
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, 3/4 cup shredded cheddar cheese, 3/4 cup Monterey Jack cheese, diced green chilies, chopped green onions, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until evenly blended.
  3. Transfer the mixture into a 9×13 inch baking dish, spreading it out evenly.
  4. In a small bowl, combine the crushed Doritos with the melted butter and stir until well coated.
  5. Sprinkle the Doritos mixture evenly over the chicken layer. Top with the remaining 1/4 cup cheddar and 1/4 cup Monterey Jack cheese.
  6. Bake uncovered for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly around the edges. If topping browns too fast, loosely cover with foil halfway through baking.
  7. Let the casserole rest for 5-10 minutes before serving.

Notes

Use freshly shredded cheese for better melting. Crush Doritos to bite-sized pieces, not powder, for perfect crunch. Prepare chicken mixture a day ahead and refrigerate to save time. If topping browns too fast, tent with foil halfway through baking.
