Instructions

  1. Carefully pluck the yellow petals from about 2 cups of fresh dandelion blossoms, avoiding green parts. Rinse petals in cold water and pat dry. (About 10 minutes)
  2. In a medium bowl, whisk together 1 cup all-purpose flour, 1 teaspoon baking powder, 2 tablespoons sugar, and 1/4 teaspoon salt.
  3. In a separate large bowl, beat 1 large egg until slightly frothy. Whisk in 3/4 cup milk and 1 teaspoon vanilla extract (optional).
  4. Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Batter should be thick but pourable, like pancake batter. Avoid overmixing. (About 5 minutes)
  5. Gently fold the prepared dandelion petals into the batter, coating them without crushing.
  6. Pour vegetable oil into a heavy skillet to about 1-inch depth and heat over medium-high until it reaches 350°F (175°C).
  7. Using a tablespoon or small scoop, drop dollops of batter into the hot oil without overcrowding. Fry each side for 2-3 minutes until golden and crispy, flipping carefully. Fry in batches. (About 15 minutes total)
  8. Remove fritters and drain on paper towels or a cooling rack. Let cool slightly for 5 minutes.
