These crispy air fryer buffalo cauliflower bites are a quick, easy, and spicy snack with a perfect crunch and tangy buffalo flavor, ideal for game nights or casual gatherings.

Ingredients

Scale
  • 1 medium head cauliflower, cut into bite-sized florets
  • ½ cup (60g) all-purpose flour (can substitute with gluten-free blend)
  • ½ cup (120ml) water
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (120ml) buffalo sauce (e.g., Frank’s RedHot)
  • 1 tablespoon olive oil or melted butter
  • Optional: ranch or blue cheese dressing for dipping

Instructions

  1. Wash and cut the medium head of cauliflower into bite-sized florets, about 1 to 1½ inches each. Pat dry with a kitchen towel to help the batter stick better.
  2. In a medium bowl, whisk together ½ cup all-purpose flour, ½ cup water, 1 teaspoon garlic powder, 1 teaspoon paprika, ½ teaspoon salt, and ¼ teaspoon black pepper until smooth with no lumps. The batter should be thick enough to coat but still drip slowly.
  3. Dip each floret into the batter, letting excess drip off, then place on a parchment-lined baking sheet to set the coating.
  4. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  5. Place coated florets in a single layer in the air fryer basket, leaving space between pieces for air circulation. Cook for 12-15 minutes, shaking the basket or flipping halfway through to ensure even crisping. Watch for a golden, slightly charred look but avoid burning.
  6. While the cauliflower cooks, mix ½ cup buffalo sauce with 1 tablespoon melted butter or olive oil in a large bowl.
  7. Once a batch is done, transfer it immediately into the sauce bowl and toss gently to coat each piece evenly.
  8. Serve warm with ranch or blue cheese dressing for dipping if desired.

Notes

Pat cauliflower dry before battering to avoid soggy coating. Do not overcrowd the air fryer basket to maintain crispiness. Toss cauliflower in buffalo sauce immediately after air frying while still hot. To re-crisp, air fry for 2-3 minutes after saucing. For vegan version, use plant-based butter and vegan buffalo sauce. Oven baking alternative: bake at 425°F (220°C) on wire rack for 20-25 minutes, flipping halfway.
