Instructions

  1. Prepare the popcorn: Pop about 1/3 cup (65g) kernels to yield 8 cups popcorn using an air popper or stovetop. If using microwave popcorn, pour into a large bowl and remove unpopped kernels.
  2. Melt the white chocolate: Add white chocolate chips and coconut oil to a microwave-safe bowl. Heat in 20-second bursts, stirring after each, until smooth and glossy (about 1-2 minutes).
  3. Coat the popcorn: Drizzle melted white chocolate over the popcorn. Use a silicone spatula or clean hands to gently toss until all kernels are coated. Add vanilla extract if using and toss again.
  4. Add the sprinkles: While chocolate is still wet, sprinkle Valentine sprinkles evenly over the popcorn. Add mini marshmallows or freeze-dried strawberries if desired. Toss gently to distribute.
