  • 3 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 cup sun-dried tomatoes, chopped (packed in oil)
  • 2 cups fresh baby spinach
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Freshly cracked black pepper (for garnish)

Instructions

  1. Pat the shrimp dry with paper towels to remove excess moisture. Season with salt, pepper, and smoked paprika. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2 minutes on one side until pink and slightly golden, then flip and cook for another 1-2 minutes. Remove shrimp to a plate and set aside.
  3. Lower heat to medium and add butter to the same skillet. When melted, add minced garlic and stir frequently until fragrant and just starting to turn golden, about 1 minute.
  4. Stir in chopped sun-dried tomatoes and Italian seasoning. Cook for 2 minutes until flavors mingle and tomatoes soften slightly.
  5. Slowly pour in heavy cream while stirring. Bring to a gentle simmer and add freshly grated Parmesan cheese. Stir until cheese melts and sauce thickens slightly, about 3-4 minutes. Add a splash of water or broth if sauce is too thick.
  6. Add fresh baby spinach and crushed red pepper flakes if using. Stir until spinach wilts, about 1-2 minutes. Taste and adjust salt and pepper as needed.
  7. Return cooked shrimp to the skillet and toss gently to coat in the sauce. Warm through for another minute.
  8. Remove from heat and sprinkle chopped parsley and freshly cracked black pepper over the top.
  9. Serve immediately with your choice of sides or crusty bread to soak up the sauce.
