A rich, velvety tomato sauce with roasted garlic, perfectly cooked pasta, and a creamy texture that delivers pure comfort food in under 30 minutes.

  • 12 oz (340 g) pasta (penne, spaghetti, or fettuccine)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 can (14 oz, 400 g) crushed tomatoes
  • 1 cup (240 ml) heavy cream
  • ½ cup (50 g) Parmesan cheese, freshly grated
  • 2 tbsp basil, finely chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining and set the pasta aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until fragrant and the onion is translucent—about 2-3 minutes.
  3. Add the crushed tomatoes to the skillet and stir to combine. Let the mixture simmer for 5-7 minutes.
  4. Reduce the heat to low and slowly stir in the heavy cream. The sauce will turn a lovely shade of orange.
  5. Season the sauce with salt, pepper, and red pepper flakes if desired. Taste and adjust as needed.
  6. Add the cooked pasta to the sauce, tossing to coat each piece evenly. Gradually add the reserved pasta water if the sauce is too thick.
  7. Stir in the freshly grated Parmesan cheese and chopped basil, mixing until the cheese melts into the sauce.
  8. Serve immediately, garnished with extra Parmesan and fresh basil.
