  • 2 cloves garlic, minced

  • 1 cup shredded carrots
  • 1 cup snap peas or broccoli florets
  • 1/4 cup green onions, sliced (for garnish)
  • 1/4 cup chopped peanuts (optional)

Instructions

  1. Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions (usually 4-5 minutes). Drain and rinse under cold water to prevent sticking.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, honey, lime juice, sesame oil, and warm water until smooth. Adjust consistency by adding more water if needed.
  3. Heat vegetable oil in a skillet or wok over medium heat. Add minced garlic and grated ginger, cooking until fragrant (about 30 seconds).
