  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 4 large eggs, room temperature
  • 1 cup whole milk or dairy-free alternative
  • 1 tbsp granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tbsp unsalted butter, for the skillet
  • Optional toppings: maple syrup, powdered sugar, extra strawberries

Instructions

  1. Prepare the cream cheese filling by beating softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. Set aside.
  2. Hull and slice the strawberries thinly.
  3. Lay out the bread slices. Spread about 2 tablespoons of the cream cheese mixture on one slice, top with a few strawberry slices, then cover with another slice of bread, pressing gently to seal.
  4. In a large bowl, whisk together eggs, milk, sugar, cinnamon, and salt until fully combined and slightly frothy.
  5. Heat a non-stick skillet or griddle over medium heat and melt about 1 tablespoon of butter.
  6. Dip each sandwich carefully into the egg batter, soaking both sides but not leaving it soggy. Place on the hot skillet and cook for about 3-4 minutes per side until golden brown and cooked through, flipping gently.
  7. Transfer cooked French toast to a baking sheet and keep warm in a low oven (about 200Β°F) while finishing the rest.
  8. Serve topped with powdered sugar, maple syrup, and extra strawberries.

Notes

If bread is too fresh and soft, lightly toast before assembling to prevent sogginess. Use medium heat to avoid burning. Press sandwiches firmly when assembling to keep filling inside. For gluten-free, use gluten-free bread. Vegan version possible with dairy-free cream cheese and plant-based milk.
