A creamy, tangy, and spicy buffalo chicken dip made effortlessly in a slow cooker, perfect for cozy gatherings, game days, and potlucks.

Ingredients

Scale
  • 3 cups cooked shredded chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or cheddar-mozzarella blend)
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of cayenne pepper for extra heat

Instructions

  1. Prepare the chicken: shred about 3 cups (roughly 450 grams) of cooked chicken and warm to room temperature. (5 minutes)
  2. Soften the cream cheese in a microwave-safe bowl for 30 seconds to 1 minute until soft but not melted. (1 minute)
  3. In a medium mixing bowl, combine softened cream cheese, buffalo sauce, ranch dressing, shredded cheese, garlic powder, onion powder, and black pepper. Mix until smooth and creamy. (5 minutes)
  4. Add shredded chicken to the mixture and stir until evenly coated. (2 minutes)
  5. Transfer the mixture to the slow cooker and spread evenly. Sprinkle sliced green onions on top. (2 minutes)
  6. Cover and cook on low for 2 to 3 hours, stirring once halfway through. (2 to 3 hours)
  7. Before serving, stir again and adjust seasoning with more buffalo sauce or ranch if desired. (1 minute)
  8. Serve warm with tortilla chips, celery sticks, or crackers immediately.

Notes

If dip is too thick, add a splash of milk or extra ranch dressing to loosen. If too watery, stir in more shredded cheese and cook uncovered for 15 more minutes. Stir halfway through cooking to prevent sticking and ensure creamy texture. Can be baked at 350°F for 20-25 minutes as an alternative to slow cooking.
