Instructions

  1. Pour 2 cups (480 ml) of milk into a medium saucepan over medium heat. Warm gently for about 3-4 minutes until steaming but not boiling.
  2. Whisk together 2 tablespoons unsweetened cocoa powder, 2 tablespoons granulated sugar, and a pinch of salt in a small bowl.
  3. Slowly whisk the cocoa-sugar mix into the hot milk, stirring constantly to avoid lumps. Keep whisking until the mixture is smooth and slightly thickened, about 2-3 minutes.
  4. Drop in 1 tablespoon softened cream cheese. Whisk vigorously until fully melted and integrated. Lower heat if needed to avoid curdling.
  5. Add 1 teaspoon vanilla extract and 1 tablespoon red food coloring (or 1 teaspoon beet powder). Whisk until color is evenly distributed.
  6. In a chilled bowl, pour 1 cup heavy whipping cream. Add 2 teaspoons powdered sugar and ½ teaspoon vanilla extract. Whip on medium-high speed until soft peaks form, about 3-5 minutes.
  7. Pour the hot chocolate into mugs. Top generously with the freshly whipped cream. Optionally, sprinkle a pinch of cocoa powder or red velvet cake crumbs on top.
