  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, chopped
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 3 cups fresh baby spinach
  • 1 small onion, finely chopped
  • Optional garnishes: fresh chopped parsley or basil leaves, fresh lemon wedges

Instructions

  1. Rinse and pat dry the shrimp. Chop the sun-dried tomatoes, mince the garlic, finely chop the onion, and wash the spinach leaves.
  2. Place a large skillet over medium heat and melt 2 tablespoons of butter. Add the chopped onion and sauté for 2-3 minutes until translucent and fragrant.
  3. Add the minced garlic and cook for about 30 seconds, stirring constantly to avoid burning.
  4. Add the shrimp in a single layer. Season with salt, pepper, and crushed red pepper flakes if using. Cook for 2 minutes on one side until pink and slightly opaque. Flip and cook another 1-2 minutes until just cooked through. Remove shrimp and set aside.
  5. Lower heat to medium-low. Add remaining 2 tablespoons of butter, then pour in the heavy cream. Stir gently and warm for about 2 minutes until it begins to thicken.
  6. Sprinkle in the Parmesan cheese and chopped sun-dried tomatoes, stirring constantly until the sauce thickens and becomes creamy. Add a splash of water or broth if too thick.
  7. Toss in the fresh spinach and stir until wilted, about 1-2 minutes.
  8. Return the cooked shrimp to the pan. Stir gently to combine and heat through for another minute. Adjust seasoning with salt and pepper if needed.
  9. Serve immediately, garnished with fresh parsley or basil and lemon wedges.

Notes

Do not overcook shrimp to avoid rubbery texture. Use wild-caught shrimp for best flavor. For dairy-free version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Sauce can be loosened with water or broth if too thick. Reheat leftovers gently on stovetop with a splash of liquid.
