  • 3 cloves minced garlic
  • 8 oz uncooked fettuccine pasta (regular or whole wheat)
  • 3 cups chicken broth (low sodium preferred)
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup grated parmesan cheese
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Pat dry chicken breasts and cut into bite-sized pieces. Season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and cook 4–5 minutes until golden but not cooked through. Remove and set aside.
  3. Reduce heat to medium and sautΓ© minced garlic for about 30 seconds until fragrant.
  4. Add chicken broth and heavy cream to the pan. Bring to a simmer, scraping up brown bits.
  5. Break fettuccine pasta in half and add to the pan. Stir to submerge pasta completely.
  6. Simmer uncovered, stirring frequently, for 12–15 minutes until pasta is al dente and most liquid is absorbed.
  7. Lower heat to medium-low and add softened cream cheese in chunks. Stir until melted and incorporated.
  8. Return chicken to the pan along with grated parmesan cheese. Stir and cook 2–3 minutes until chicken is cooked through and sauce thickens.
  9. Adjust salt and pepper to taste. Add a splash of broth or cream if sauce is too thick.
  10. Garnish with chopped fresh parsley and serve immediately.

Notes

Do not overcrowd the pan when searing chicken to ensure proper browning. Use room temperature cream cheese for smooth sauce. Stir frequently but gently to prevent pasta from sticking. Adjust heat to medium or medium-low once liquids are added to avoid curdling. Freshly grated parmesan cheese is recommended for best flavor. If sauce is too thin, simmer off heat for a minute to thicken.
