  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 2 1/2 cups low sodium chicken broth
  • 1 cup milk (whole or 2%)
  • 4 ounces cream cheese, softened
  • 3/4 cup freshly grated Parmesan cheese
  • 8 ounces fettuccine pasta, broken in half
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil over medium heat in a large skillet or pot. Add chicken pieces, season with salt and pepper, and cook for 5-6 minutes until golden and cooked through. Remove chicken and set aside.
  2. Lower heat to medium-low, add minced garlic to the same pot, and stir constantly for 30 seconds to 1 minute until fragrant.
  3. Pour in chicken broth and milk, stir to combine, then add broken fettuccine pasta. Push pasta down to submerge in liquid. Increase heat to medium-high and bring to a gentle boil.
  4. Cook pasta uncovered, stirring occasionally, for 10-12 minutes. Add more broth or milk if liquid gets too low.
  5. Lower heat to medium-low, add softened cream cheese in dollops, stirring gently until fully melted and sauce is smooth.
  6. Stir in Parmesan cheese, Italian seasoning (if using), and adjust salt and pepper. Add more milk if sauce is too thick.
  7. Return cooked chicken to the pot, stir gently to coat with sauce, and cook together for 2-3 minutes to meld flavors.
  8. Remove from heat and sprinkle chopped fresh parsley on top before serving.

Do not overcook chicken to keep it tender. Use fresh Parmesan for best melting and flavor. Stir frequently during pasta cooking to prevent sticking. Adjust liquid to control sauce thickness.
