  • 1 cup creamy peanut butter
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups heavy whipping cream, chilled
  • Chopped roasted peanuts for crunch (optional)

Instructions

  1. Crush graham crackers into fine crumbs using a food processor or rolling pin.
  2. Mix crumbs with melted butter and sugar until combined.
  3. Press mixture firmly into bottom and sides of a 9-inch pie dish and chill in fridge.
  4. Beat softened cream cheese until smooth, then add peanut butter and vanilla extract; mix until silky.
  5. Gradually add powdered sugar, beating well after each addition.
  6. Whip heavy cream in a chilled bowl until stiff peaks form.
  7. Gently fold whipped cream into peanut butter mixture in three additions.
  8. Pour filling into chilled crust, smooth top, and refrigerate for at least 4 hours or overnight.
  9. For clean slices, dip a sharp knife in hot water and wipe dry before cutting.
