  • 1 tablespoon (15 ml) coconut oil (optional)
  • Pinch of sea salt (optional, for sprinkling)

Instructions

  1. In a medium mixing bowl, combine peanut butter, powdered sugar, softened unsalted butter, and vanilla extract. Beat with an electric mixer on medium speed until smooth and fluffy. Add more powdered sugar if mixture is too sticky.
  2. Line a baking sheet with parchment paper or silicone mat. Using a small cookie scoop or tablespoon, portion the peanut butter mixture into oval egg shapes. Roll gently between palms to smooth edges. Place on the lined tray and refrigerate for 15 minutes to firm up.
  3. Melt dark chocolate chips and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring between each, until fully melted and glossy. Alternatively, melt using a double boiler over simmering water.
  4. Dip each chilled peanut butter egg into the melted chocolate using a fork or dipping tool, letting excess drip off. Place coated eggs back onto the parchment-lined tray. Sprinkle a pinch of sea salt on top if desired.
  5. Refrigerate the tray for at least 30 minutes until the chocolate shell hardens completely before serving.
