  • 1/2 cup sour cream, full-fat preferred (about 120 g)
  • 1 cup cold heavy whipping cream (240 ml)
  • 1 teaspoon vanilla extract

Instructions

  1. Make the crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until crumbs are evenly coated and feel like damp sand. Press mixture firmly and evenly into the bottom and up the sides of a 9-inch pie dish. Chill crust in fridge for at least 10 minutes.
  2. Prepare the filling base: In a large bowl, whisk together sweetened condensed milk, fresh lemon juice, lemon zest, sour cream, and vanilla extract until slightly thickened. Adjust lemon juice to taste if needed.
  3. Whip the cream: In a separate chilled bowl, beat cold heavy whipping cream until soft peaks form, about 3-5 minutes with an electric mixer.
  4. Fold whipped cream into lemon mixture gently using a rubber spatula until smooth and fluffy with no streaks.
  5. Assemble the pie: Pour lemon filling over chilled crust and smooth the top. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  6. Serve: Remove pie from fridge, garnish with thin lemon slices or extra lemon zest if desired. Slice with a sharp knife dipped in hot water for clean cuts.
