A quick and easy no-bake cheesecake featuring a tangy key lime filling and a buttery graham cracker crust, perfect for summer gatherings and potlucks.

  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened (full fat)

  • 1 cup heavy whipping cream, chilled
  • ½ cup fresh key lime juice (about 68 key limes)
  • 1 tablespoon key lime zest (optional)
  • 1 teaspoon pure vanilla extract

  • Thin slices or wedges of fresh key lime (optional, for garnish)

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until mixture resembles wet sand.
  2. Press crust mixture evenly into the bottom of a 9-inch springform pan, packing down firmly. Chill in the fridge for at least 10 minutes.
  3. In a large mixing bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  4. Gradually add powdered sugar, beating until fully incorporated and fluffy. Mix in vanilla extract and key lime zest if using.
  5. In a separate chilled bowl, whip heavy cream until stiff peaks form, about 3-4 minutes on high speed.
  6. Slowly pour fresh key lime juice into the cream cheese mixture, mixing on low speed to combine.
  7. Gently fold whipped cream into the cream cheese mixture using a spatula, taking care not to deflate the mixture.
  8. Pour filling over chilled crust and smooth the top with a spatula. Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight.
  9. Before serving, run a knife around the edges to loosen and release the springform pan sides.
  10. Garnish with whipped cream, fresh key lime slices, and mint leaves if desired. Slice and enjoy.

Notes

Use fresh key lime juice for best flavor. Chill the cheesecake overnight for best texture and clean slices. If filling is too soft after chilling, freeze for 10 minutes before serving. For dairy-free or gluten-free versions, substitute ingredients accordingly.
