  • 12 ounces spaghetti, cooked al dente
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish lightly with butter or cooking spray.
  2. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 3 minutes.
  4. Add the garlic and mushrooms to the skillet and cook for another 5 minutes, stirring occasionally.
  5. Sprinkle the flour over the vegetable mixture and whisk well to combine. Cook for 1 minute to eliminate the raw flour taste.
  6. Gradually add the chicken broth while whisking continuously. Once incorporated, stir in the heavy cream and bring the mixture to a gentle simmer.
  7. Add the Parmesan cheese and stir until melted and smooth. Season the sauce with salt and pepper to taste.
  8. Combine the cooked pasta and diced ham in the skillet, tossing to coat everything evenly with the sauce.
  9. Transfer the mixture to the prepared baking dish and spread it out evenly. Sprinkle shredded mozzarella cheese over the top.
  10. Bake for 20 minutes, or until the cheese is melted and bubbly. For a golden crust, broil for an additional 2-3 minutes.
  11. Let the dish cool slightly before garnishing with fresh parsley. Serve warm and enjoy!
