  • 1/4 teaspoon freshly cracked black pepper (optional)
  • 1 tablespoon fresh dill or parsley, finely chopped
  • Pinch red pepper flakes (optional)
  • 3 medium pita bread rounds (about 5 oz), cut into triangles
  • 2 tablespoons olive oil (for brushing pita)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder (optional)
  • Optional garnishes: extra crumbled feta, chopped fresh herbs (dill, mint, parsley), drizzle of olive oil, pinch of lemon zest

Instructions

  1. Preheat oven to 375°F (190°C). Gather all ingredients.
  2. Cut pita rounds into triangles (about 8 pieces per round). Arrange on a parchment-lined baking sheet. Brush both sides with olive oil, then sprinkle with sea salt, dried oregano, and optional garlic powder.
  3. Bake pita chips for 8-10 minutes, turning once halfway, until golden and crispy. Watch closely to prevent burning.
  4. In a food processor, combine crumbled feta, Greek yogurt, olive oil, minced garlic, and lemon juice. Pulse until smooth and creamy, about 1 minute. Scrape down sides and pulse again if needed.
  5. Add black pepper, red pepper flakes (if using), and chopped dill or parsley. Pulse until just combined. Taste and adjust lemon, herbs, or olive oil as needed.
  6. Transfer dip to a serving bowl. Swirl top with a spoon, garnish with extra feta, herbs, lemon zest, and a drizzle of olive oil.
  7. Pile crispy pita chips around the bowl. Serve immediately, or let dip chill for 20-30 minutes to deepen flavors.
  8. Store leftover dip in an airtight container in the fridge for up to 3 days. Store pita chips in a sealed container at room temperature for up to 4 days.

For best texture, use block feta and avoid over-processing. Let the dip rest for 20-30 minutes to mellow flavors. Substitute dairy-free yogurt and vegan feta for a vegan version, or gluten-free pita for gluten-free chips. Add sun-dried tomatoes, olives, or za’atar for extra Mediterranean flair.
