  • 2 garlic cloves, minced
  • 1 small onion, finely diced
  • 1 cup sliced mushrooms (cremini, button, or shiitake)
  • 1 cup orzo pasta
  • 2 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups baby spinach
  • Salt and pepper to taste
  • Grated parmesan cheese (optional)

Instructions

  1. Heat 2 tablespoons of unsalted butter in a large skillet over medium heat.
  2. Add the minced garlic and diced onions. Cook for 2-3 minutes until fragrant and softened.
  3. Add the sliced mushrooms and sautΓ© for about 5 minutes, stirring occasionally, until they’re tender and slightly golden.
  4. Stir in the orzo pasta and toast it lightly for 1-2 minutes to enhance its nutty flavor.
  5. Pour in 2 cups of chicken or vegetable broth. Bring to a gentle boil, then reduce heat to a simmer. Cook the orzo for 8-10 minutes, stirring occasionally to prevent sticking.
  6. Once the orzo is tender and has absorbed most of the liquid, stir in 1 cup of heavy cream and the remaining 2 tablespoons of butter.
  7. Fold in the baby spinach, allowing it to wilt. This should only take 1-2 minutes.
  8. Season generously with salt and pepper, tasting as you go. Add grated parmesan cheese if desired.
  9. Serve immediately, garnished with a sprinkle of freshly cracked black pepper or additional parmesan cheese.
