  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 cup sour cream (full-fat preferred)
  • 1/2 cup mayonnaise
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon dried parsley (or fresh finely chopped for garnish)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Peel and thinly slice 3 medium yellow onions into approximately 1/8-inch slices.
  2. Place a large sauté pan over medium heat and add 3 tablespoons unsalted butter plus 1 tablespoon olive oil. Let the butter melt completely and start to foam.
  3. Add the sliced onions and stir well to coat. Spread them out evenly in the pan. Cook over medium-low heat, stirring every 5 minutes for about 25-30 minutes until deep golden brown. If onions start sticking, sprinkle 1-2 tablespoons water to deglaze the pan.
  4. In the last 3 minutes, stir in 2 minced garlic cloves.
  5. Once onions are deeply caramelized and soft, transfer them to a bowl and let cool slightly.
  6. In a separate bowl, combine 1 cup sour cream, 1/2 cup mayonnaise, 1 teaspoon Worcestershire sauce, 1 teaspoon fresh lemon juice, 1 teaspoon dried parsley, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir until smooth and creamy.
  7. Fold the caramelized onions into the creamy mixture. Taste and adjust salt or lemon juice if needed.
  8. Cover and refrigerate for at least 2 hours before serving to let flavors meld.

Notes

For dairy-free version, substitute sour cream and mayonnaise with coconut yogurt and vegan mayo. Greek yogurt can be used instead of sour cream for a tangier, protein-rich dip. To speed up caramelization, add a pinch of baking soda but do not overdo it. Caramelize onions low and slow to avoid bitterness. The dip tastes better after chilling for a few hours or overnight. Store leftovers in an airtight container in the fridge for up to 4 days. Freeze caramelized onions separately for up to 3 months.
