  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cans white beans (Cannellini or Great Northern beans)
  • 1 can diced green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 ounces cream cheese, cubed
  • 1 cup shredded Monterey Jack cheese (optional)

Instructions

  1. Place the chicken breasts into the bottom of your crockpot. Sprinkle the cumin, chili powder, and garlic evenly over the chicken.
  2. Add the chopped onion, green chilies, and white beans on top of the chicken.
  3. Pour in the chicken broth, ensuring all the ingredients are submerged.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender and easy to shred.
  5. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot.
  6. Cut the cream cheese into cubes and stir it into the chili. Let it melt completely, stirring occasionally for about 10 minutes.
  7. Optional: Add shredded Monterey Jack cheese for an extra creamy finish. Stir until melted.
  8. Stir everything well, taste, and adjust seasoning if needed. Serve hot with your favorite toppings.
