  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 6 slices bacon, cooked crisp and chopped
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese (optional but recommended)
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 8 minutes. Drain on paper towels and chop into bite-sized pieces.
  2. Place chicken breasts in the slow cooker and season lightly with salt and pepper.
  3. In a mixing bowl, combine softened cream cheese, ranch seasoning, sour cream, garlic powder, and onion powder. Mix until smooth.
  4. Spread the cream cheese mixture evenly over the chicken in the slow cooker.
  5. Cover and cook on low for 4 to 5 hours, until chicken is tender and reaches an internal temperature of 165°F (74°C).
  6. Remove chicken and shred with two forks. Return shredded chicken to the slow cooker and stir to combine with the sauce.
  7. Stir in shredded cheddar cheese and chopped bacon. Mix well and let cheese melt for 5 minutes.
  8. Garnish with chopped fresh parsley and serve hot, ideally over rice, pasta, or steamed vegetables.

Notes

Use room temperature cream cheese to avoid lumps. Cook bacon separately for best texture. If sauce is too thick after shredding chicken, add a splash of milk or chicken broth. Resist opening the slow cooker lid during cooking to maintain heat. For dairy-free, substitute cream cheese and sour cream with coconut-based alternatives and use vegan bacon.
