  • 1 cup wild rice blend (about 185 grams)
  • 3 cups chicken broth (720 ml), homemade or low sodium
  • 1 cup heavy cream (240 ml)
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz sliced mushrooms (optional)
  • 2 tablespoons butter (30 grams)
  • 2 tablespoons all-purpose flour (16 grams)
  • 1 teaspoon fresh thyme, chopped
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese (50 grams, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse 1 cup of wild rice blend under cold water briefly, then drain and set aside.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and cook for 3-4 minutes until translucent.
  4. Add minced garlic and sliced mushrooms to the skillet. Cook for another 5 minutes, stirring occasionally, until mushrooms release moisture and start to brown. Season lightly with salt and pepper.
  5. Season chicken breasts with salt and pepper. Push the onion mixture to one side of the skillet, add chicken breasts, and sear for 2-3 minutes per side until golden but not fully cooked. Remove chicken and set aside.
  6. Sprinkle 2 tablespoons of all-purpose flour over the butter and pan juices in the skillet. Stir constantly for 1-2 minutes to cook off the raw flour taste.
  7. Gradually whisk in 3 cups chicken broth and 1 cup heavy cream. Bring to a gentle simmer, stirring, until sauce thickens slightly (about 3-4 minutes). Taste and adjust seasoning, then add 1 teaspoon chopped fresh thyme.
  8. In a large oven-safe casserole dish, combine the wild rice and creamy sauce mixture. Nestle the browned chicken breasts on top.
  9. Sprinkle grated Parmesan cheese evenly over the casserole if using.
  10. Bake uncovered for 45-50 minutes, checking halfway through to add a splash of broth if the dish looks dry.
  11. Remove from oven and let rest for 5-10 minutes before serving.

Notes

If your oven runs hot, tent the casserole loosely with foil after 30 minutes to prevent over-browning. Check liquid levels halfway through baking and add broth if needed to keep the rice moist. Browning the chicken before baking locks in juices and flavor. Rinsing wild rice reduces excess starch and prevents a gluey texture. Let the bake rest after cooking to thicken the sauce and meld flavors.
