  • 2 cups cooked chicken breasts, shredded or diced
  • 1 cup sliced ham, diced into bite-sized pieces
  • 1 cup Swiss cheese, shredded or thinly sliced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole milk preferred)
  • 4 ounces cream cheese, softened
  • 1 cup breadcrumbs (Panko or regular)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon Dijon mustard (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish lightly with olive oil or butter.
  2. Shred or dice the cooked chicken breasts and dice the ham into bite-sized pieces. Set aside.
  3. In a medium saucepan, melt 2 tablespoons of butter over medium heat.
  4. Whisk in 2 tablespoons of flour and cook for 1-2 minutes to eliminate the raw flour taste.
  5. Gradually add 2 cups of milk, whisking constantly to avoid lumps. Cook until thickened, about 5 minutes.
  6. Stir in 4 ounces of cream cheese and 1 cup of shredded Swiss cheese until melted and smooth. Season with salt, pepper, and 1 teaspoon of Dijon mustard if desired.
  7. Spread half of the shredded chicken in the casserole dish.
  8. Top with half of the diced ham and half of the cheese sauce.
  9. Repeat the layers with the remaining chicken, ham, and sauce.
  10. In a small bowl, mix 1 cup of breadcrumbs with 1 tablespoon of olive oil. Sprinkle evenly over the casserole.
  11. Place the casserole in the oven and bake for 25-30 minutes, or until the topping is golden and the sauce is bubbling.
  12. Let the casserole cool for 5 minutes before serving to allow the layers to settle.
