Tender, flaky biscuits soak up the rich, tangy, and slightly sweet sloppy joe filling in this comforting casserole. Perfect for busy weeknights or casual gatherings, this dish is a crowd-pleaser that feels like a warm hug.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 onion, finely chopped
  • 1 bell pepper, diced small (red or green)
  • 2 tbsp tomato paste
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 can flaky-style biscuits

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your casserole dish with cooking spray or a light coat of butter.
  2. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks, about 5-7 minutes. Drain any excess fat.
  3. Add the onion and bell pepper to the skillet. Cook for another 5 minutes, or until the vegetables are softened.
  4. Stir in the tomato paste, ketchup, Worcestershire sauce, brown sugar, garlic powder, salt, and pepper. Mix well and let simmer for 3-5 minutes until the flavors meld together.
  5. Transfer the sloppy joe filling into your prepared casserole dish, spreading it out evenly.
  6. Arrange the canned biscuits on top of the filling. They should cover most of the surface but don’t worry if there are small gaps.
  7. Bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
  8. Let the casserole cool for 5 minutes before serving.

Notes

[‘Don’t skip draining the beef to avoid a soggy casserole.’, ‘Use fresh peppers and onions for better flavor.’, ‘Cover the dish loosely with foil if biscuits start to brown too quickly.’, ‘Customize the flavor with red pepper flakes for heat or apple cider vinegar for tang.’, ‘Prepare the sloppy joe filling ahead of time and refrigerate until ready to bake.’]
