Cozy Peach Cobbler with Cinnamon Roll Crust

A quick and easy peach cobbler featuring juicy peaches wrapped in a soft cinnamon roll crust, perfect for cozy family dinners or sweet treats.

  • 4 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches, drained)
  • ⅓ cup granulated sugar (adjust based on sweetness of peaches)
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon cornstarch
  • 1 package (8 count) refrigerated cinnamon rolls with icing (e.g., Pillsbury)
  • Optional toppings: vanilla ice cream or whipped cream, extra cinnamon sugar for sprinkling

Instructions

  1. If using fresh peaches, peel by blanching them in boiling water for 30 seconds, then plunge into ice water to remove skins. Slice into ½-inch thick pieces. If using canned or frozen peaches, drain well.
  2. In a medium bowl, combine peaches, ⅓ cup granulated sugar, 1 tablespoon lemon juice, ½ teaspoon ground cinnamon, and 1 teaspoon cornstarch. Toss gently and set aside for 10 minutes.
  3. Lightly grease a 9×9 inch baking dish with butter or nonstick spray.
  4. Open the package of cinnamon rolls and separate the rolls. Place them around the edges of the baking dish, pressing lightly to form a crust. Reserve the icing for later. Optionally, break one or two rolls into chunks and scatter over the peach filling.
  5. Pour the peach mixture into the center of the dish inside the cinnamon roll crust and spread gently.
  6. Place the remaining cinnamon rolls on top of the peach filling, spacing evenly.
  7. Bake at 350°F (175°C) for 30-35 minutes until crust is golden brown and peaches are bubbly. Cover loosely with foil if crust browns too fast.
  8. Remove from oven and immediately drizzle reserved icing over the warm cobbler.
  9. Let cool for 10-15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Watch the crust while baking; cover with foil if it browns too quickly. Use fresh, frozen (thawed and drained), or canned peaches. Let the cobbler cool before serving to allow filling to set. Optional to add a pinch of nutmeg or ginger for extra warmth. Leftovers keep up to 3 days refrigerated and can be frozen for up to 2 months.
